What's 4 Dinner??

UPDATE: So I finally made this for dinner last night. It was really good! I made a couple of changes; I did not have any green onions on hand, so I put some dried onion flakes in instead, and then I put a layer of shredded cheddar on before the cracker topping. I served it with zucchini sauteed in garlic and olive oil and a bread basket. The kids even loved it!

I love reading blogs that post recipes. I'm on a quest to try to make new things for dinner. I'm so tired of the same ol' same ol'. But with kids it's hard to be too adventurous. So I'm going to post some new recipes I'm trying. I'll let you know how they turn out. You let me know too, if you try them, how you like them! OK..Here we go...

Crumby Chicken
(Not your mother's) Chicken Casserole

10.5 oz. can cr. of chicken soup
1 1/2 C. sour cream
green onions to taste
pepper to taste 3-4 C. cooked & shredded chicken (you can use canned if you rinse well first)
3/4 stick butter
1 tube Ritz crackers

Mix and heat soup, sour cream, green onions, and pepper. Stir in chicken. Pour mixture into 9x13 or 8 inch square pan. Melt butter and stir in crunched up Ritz. (It will seem like it's not enough butter but keep stirring). Spread crackers over mixture and bake at 350* for 30 minutes.
